For our second foray into online cooking classes, we took a request and a challenge. What greater challenge than to create a healthy version of an old, heavy, gut-busting favorite: Sticky Toffee Pudding.
We turn to our old stalwart tofu to get us there on the creamy and protein-y factor, but how else do we make this magic? Tune in below to find out!
Equipment
- Food processor or blender
- Mixing bowl
- 2 x Ramekin or similar
- Parchment paper
- Saucepan
Ingredients
For the pudding
- 3 dates soaked in water
- 30 g coconut flour
- 40 g whole wheat flour
- 220 g tofu
- 1 tbsp monkfruit sweetener this is the one I use (affiliate)
- 1 tsp vanilla
- 1 tsp baking soda aka bicarbonate
- 1 tbsp Apple cider vinegar
- 1 shot espresso approx 30 ml
For the toffee
- 3 tbsp sweetener that liquifies at high heat monkfruit/erythritol mixes should, maple syrup could work
- 1 tbsp almond butter
Instructions
- Pre-heat oven to 325F/170C.
- Line two ramekins with parchment paper.
- In a food processor, blitz the dates until a smooth paste forms. If it stays a little chunky, it isn't the biggest deal.
- Add in the tofu, vanilla, vinegar and espresso and process until smooth.
- Add in coconut flour, whole wheat flour, sweetener and baking soda and process again until thick batter forms (thicker than a cake batter).
- Divide between the ramekins and bake for 20-25 minutes.
- Meanwhile, make the toffee by adding sweetener to saucepan and heating until just liquid.
- Add almond butter and mix until smooth.
- Remove ramekins, unmould, remove parchment and drizzle caramel over the top.
