For the pudding

dates
soaked in water

coconut flour

monkfruit sweetener
this is the one I use (affiliate)

vanilla

baking soda
aka bicarbonate

Apple cider vinegar

shot espresso
approx 30 ml
For the toffee
3
tbsp
sweetener that liquifies at high heat
monkfruit/erythritol mixes should, maple syrup could work

almond butter
Instructions
Pre-heat oven to 325F/170C.
Line two ramekins with parchment paper.
In a food processor, blitz the dates until a smooth paste forms. If it stays a little chunky, it isn't the biggest deal.
Add in the tofu, vanilla, vinegar and espresso and process until smooth.
Add in coconut flour, whole wheat flour, sweetener and baking soda and process again until thick batter forms (thicker than a cake batter).
Divide between the ramekins and bake for 20-25 minutes.
Meanwhile, make the toffee by adding sweetener to saucepan and heating until just liquid.
Add almond butter and mix until smooth.
Remove ramekins, unmould, remove parchment and drizzle caramel over the top.
