Ingredients
  

Plant-based Mayonnaise

  • 2.5 tbsp (40g) Tofu, extra firm
  • 1 tsp Mustard Powder
  • 1 tsp Onion Powder
  • 1-2 tsp White Wine Vinegar
  • Pinch Salt

“Chicken” Patty

  • 2 oz (56g) Chickpeas, Drained
  • 1 tbsp Soy Sauce
  • 1 1/4 tbsp (19.5g) Almond Butter
  • 1/3 cup Water
  • 0.4 cup 38g Textured Vegetable Protein
  • 1 tbsp (7.5g) Nutritional Yeast
  • 15 g (about 2 tbsp) Vital Wheat Gluten
  • 1 tbsp Veg Stock Powder
  • 1 tsp Mustard Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Black Pepper Ground

Instructions
 

Make "Chicken" Patty

  • Blitz chickpeas, soy sauce, almond butter and water in food processor until smooth.
  • Place dry ingredients in a mixing bowl and add wet ingredients. Stir to combine and allow to sit for 10 minutes.

Make Mayonnaise

  • Add all ingredients to food processor and blend, scraping down sides until smooth.

Assemble

  • Create giant patty or divide into two, if preferred. Place in 350F/180C oven or air fryer for 20-25 minutes, until crispy.
  • Add burger bun in the last two minutes, remove and slather top bun with mayonnaise. Add patty to bottom burger bun, top with lettuce and the top bun. Enjoy!
