Blitz chickpeas, soy sauce, almond butter and water in food processor until smooth.
Place dry ingredients in a mixing bowl and add wet ingredients. Stir to combine and allow to sit for 10 minutes.
Make Mayonnaise
Add all ingredients to food processor and blend, scraping down sides until smooth.
Assemble
Create giant patty or divide into two, if preferred. Place in 350F/180C oven or air fryer for 20-25 minutes, until crispy.
Add burger bun in the last two minutes, remove and slather top bun with mayonnaise. Add patty to bottom burger bun, top with lettuce and the top bun. Enjoy!
